Broccoli Microgreen, Pomegranate, and Goat Cheese Salad

Simple, easy to throw together and super nutritious. My neighbor gave us goat cheese she made using our dill, but you can use any goat cheese from the grocery store.


For this recipe, we used fresh broccoli microgreens (and dill) from Ika Greens and local spinach from Blue Lizard Farm.


Ingredients

  • 1 handful baby spinach, torn

  • 1 handful broccoli microgreens

  • 1 handful pomegranate arils

  • Goat cheese, crumbled

  • 1/2 lemon


Directions

  1. Mix the spinach and broccoli microgreens in a bowl.

  2. Top with pomegranate arils, goat cheese crumbles, and a squeeze of lemon juice.

  3. Enjoy!


**This recipe can be simplified by just mixing broccoli microgreens, pomegranate arils, and a squeeze of lemon juice. Also tasty and nutritious!**
